The Harvest
This is the production philosophy: to obtain an excellent wine, excellent grapes are needed.
The harvest takes place, at perfect ripeness, earlier than the average for the area.
After no more than 30 minutes the grapes arrive in the cellar where they are immediately cooled, when the high temperature requires it. The bunches are subjected to soft pressing with modern pneumatic presses. The fermentation takes place cold – at around 13/14° – at a controlled temperature in stainless steel barrels to keep the freshness and aromas intact.
The cold winemaking technique allows maximum respect for the bunch and keeps the qualities of the grape and 100% of the “aroma precursors” unchanged from the moment of pressing until the fermentation which takes place “sur lie”. Furthermore, the system allows us to respect the origin of the grapes coming from various vineyards of different ages (5-60 years), keeping them separate with a computerized must flow control system, which keeps the fractions and origins distinct.
La Scolca™ has continued to focus on Gavi even when it was a white that went against the grain because it exalted the typical characteristics of the native vine.
